Texas Beef Skillet

1 lb. ground beef
3/4 cup chopped onion
1 can (16 oz.) Tomatoes, cut up
1 can (15 2 oz.) Red kidney beans
1 cup quick-cooking rice
1 cup water
3 tbsp. chopped green pepper
1 2 tsp. chili powder
2 tsp. salt
2 tsp. garlic salt
3/4 cup shredded cheddar cheese (3 oz.)
Corn chips, crushed

In a skillet cook ground beef and onion till meat is browned and onion is tender. Drain off fat. Stir in the undrained tomatoes, undrained beans, rice, water, green pepper, chili powder, salt, and garlic salt. Reduce heat; simmer, covered, for 20 minutes, stirring occasionally. Top with cheese. Cover and heat about 3 minutes or till cheese melts. Sprinkle corn chips around edge. Serves 6.
