Apple Pancakes Serves 4 Ingredients: 2/3 cup Flour Sift together the flour, 2 tsp. Sugar, and Salt. Beat eggs and milk together. Gradually add flour mixture and beat until smooth. Saute apples in 1/4 cup of butter until tender. Mix 2 Tbs. sugar with the cinnamon; toss with sauteed apples. Melt 2 Tbs. butter in a 6- inch diameter, deep frypan. Pour in the batter until about 1/4-inch. When set, place 1/4 of the apples on top of the batter; cover with more batter. Fry pancake until lightly browned on both sides. Keep warm. Repeat the procedure 3 times, until all batter and apples are used. Serve warm. We recommend your utilize Granny Smith or Yellow Delicious apples in this recipe for a tart and tangy or mellow flavor, respectively. Variations: Add 1 tsp. Vanilla Extract to your batter and top your apple pancakes with a sprinkling of grated Nutmeg and Confectioners Sugar |
