Grandma's Pumpkin Pie

Filling:

1 3/4 cups mashed cooked pumpkin
2 tsp. Salt
1 3/4 cups milk
3 eggs
2/3 cup brown sugar
2 tbsp. sugar
1 1/4 tsp. Cinnamon
2 ginger
2 tsp. Nutmeg
1/4 tsp. Cloves

Beat together all ingredients. Pour into pastry-lined 9 inch pie pan. Bake at 425 degrees just until a silver knife inserted 1 inch from side comes out clean, about 45-55 minutes. The center may still look soft but will set as pie cools.

Easy Pie Crust:

1 cup flour
2 cup shortening
1/4 cup water
dash of salt

Cut shortening into flour. Mix in salt and water. Makes enough for one 2-crust pie.
