Grandma's Pumpkin Pie
Filling: 1 3/4 cups mashed cooked pumpkin Beat together all ingredients. Pour into pastry-lined 9 inch pie pan. Bake at 425 degrees just until a silver knife inserted 1 inch from side comes out clean, about 45-55 minutes. The center may still look soft but will set as pie cools. Easy Pie Crust: 1 cup flour Cut shortening into flour. Mix in salt and water. Makes enough for one 2-crust pie. |
