Honey Wheat Bread

3 1/2 to 4 cups flour
1 cup cracked wheat
2 pkg. Active dry yeast
1 1/4 cups water
2 cup milk
1/3 cup honey
3 tbsp. margarine
1 tbsp. salt
1 cup whole wheat flour

Combine 2 cups of the flour, cracked wheat, and yeast. Heat water, milk, honey, margarine, and salt just till warm and margarine is almost melted; stirring constantly. Add to flour mixture. Beat at low speed for 2 minute. Scraping sides of bowl. Beat 3 minutes at high speed.

Stir in whole wheat flour and as much of the remaining flour as you can mix in with a spoon. Knead in enough of the remaining flour to make a moderately stiff dough. Knead till smooth and elastic (6 to 8 minutes). Shape into ball. Place in greased bowl; turn once. Cover; let rise till double (about 1 hour). Punch down; divide in half. Cover; let rest 10 minutes. Shape into 2 loaves; place in two greased 8x4x2 loaf pans. Cover; let rise till almost double (about 45 minutes). Bake in 375 degree oven 35 to 40 minutes. Remove from pans; cool. Makes 2 loaves.
