TERRIFIC CRUSTED LEG OF LAMB
1 leg of lamb, approximately 3
lbs, trimmed
1 tsp. Salt
1 tsp. Pepper
3/4 tsp. Cumin
1 tsp. garlic powder
½ cup broth
½ cup bread crumbs
1/8 cup broth
Trim as much fat as
possible off lamb. Combine salt, pepper, cumin, and garlic. Rub lamb with spice mixture.
Place, fat side up, on rack in shallow roasting pan. Insert meat thermometer. Roast at 450
degrees for 30 minutes. Reduce temperature to 350 degrees. Roast, basting a few times with
the broth until temperature reaches 160 degrees. Approximately 1 hour. Remove lamb from
oven. Cover evenly with bread crumbs. Pour 1/8 cup broth into pan. Turn off oven. Return
lamb to oven for 15 minutes. Remove.
Good served with oven roasted
potatoes, steamed broccoli, and tosses salad greens.
