Tomato and Pepper Soup (vegatarian)

x1 Medium Onion
x2 Tins of Chopped Tomatoes
x3 Vegtable stock Cubes
x3 Peppers
x1 Pack of Mushrooms
Tomato Puree
Tabasco Sauce
Black Pepper
Salt

Place the Vegtable stock into a Jug and add 2 pints of boiling water. Dice your onion, Peppers and Mushrooms and place into a Large Saucepan with your Vegtable stock. Then add your tomatoes, a table spoon of tomato puree, 4 splashes of tabasco sauce, Black pepper and Salt, and let this simmer for about 30 minutes. Once this has cooled down slightly then blend to make your soup. This is also nice will a little single cream and chives swirled around in the middle for decoration.
