Walnut Apple Bundt Cake
3 eggs 1 cup vegetable oil 1 tbsp. vanilla 2 cups shredded peeled tart apples 2 cups sugar 3 cups flour 1 tbsp. cinnamon 1 tsp. Baking soda 1 tsp. Salt 3/4 tsp. Nutmeg 2 tsp. Baking powder 1 cup chopped walnuts 2 tbsp. powdered suger 2 tbsp. brown sugar In a mixing bowl, beat the eggs, oil, and vanilla. Add apples and sugar; beat for 1 minute. Combine flour, cinnamon, baking soda, salt, nutmeg, and baking powder; add to apple mixture until blended. Stir in walnuts. Pour into a greased and floured 10 inch fluted tube pan. Bake at 325 degrees for 50 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Combine the powdered sugar and brown sugar; sprinkle over cake. |
