ZUCCHINI BREAD
3 eggs
2 tsp. Vanilla
3 cups flour
1 tsp. Baking Soda
1 tsp. Salt
1 cup oil
3 tsp. Cinnamon
1/4 cup chopped nuts
1/4 tsp. Baking powder
1 cup sugar
2 cups raw zucchini, peeled and blended (may need a small amount of water added to blend)
Mix all ingredients. Pour into 2
greased loaf pans. Bake at 325 degrees for 1 hour or until toothpick tests clean.
Cool 5 minutes. Remove from
pans.
